Lemon Cranberry Bars
2 cups almonds
1 ½ cup pitted Medjool dates
1 ½ cup dried cranberries
1 tbsp sea sat
Zest of 2 organic lemons
juice of 2 organic lemons
1 cup dried shredded coconut
In a food processor, chop almonds into small pieces creating a “flour”. Use some of the almond powder to “flour” the bottom of a 9×13 baking pan.
Add the remaining ingredients to your food processor and process until incorporated. Press into baking pan.
To serve, chill for a couple of hours until firm. Then cut into squares.
Makes 16 bars










I only had 1 cup of cranberries so I used goji berries to make up the difference….these are fantastic!
Hi does anyone know what 2 cups of almonds grinds down to? I bought the almond flour.
